Spelt, millet & oat bread rolls

speltmilletoat Making bread is one of my favorite things to do. Its ever so satisfying to create a loaf from scratch, from watching it rise, to kneading it with your bare hands, and the smell that fills your house while it's baking is just incredibly comforting. So many people are bewildered by the thought of making home made bread, 'without a bread maker?!'. It's actually extremely easy once you get the hang of it, and after that first taste - you'll never look at store bought bread the same way again.

After i taught myself how to make bread with a basic recipe, i am now constantly coming up with different recipes, shapes and flavors. This one here is a reasonably healthy bread roll recipe, i make 8 balls out of the dough and then place them in the shape above inside a cake tin. When they are finished and cooled you can pull them apart quite easily and store them in a paper bag for lunches.

  • 1 & 1/4 cup Wholemeal Spelt Flour
  • 1/2 cup Almond Meal
  • 1/2 cup Millet Flour
  • 1/2 cup Rolled Oats
  • 2 tsp Yeast
  • 2 Tbs Flax Meal
  • 1 cup Warm Water
  • 1 tbs agave

Put yeast, warm water & agave in a bowl, stir a little bit and set to side for 10 minutes  |  Mix flours, oats, flax in a large bowl  |  Make a well in the center of your flours, stir yeasty mixture again and pour into the middle  |  Using a spatula, gently mix the flour into the water until well combined and a sticky doughy consistency is formed, create a large ball  |  Sprinkle some flour on the bottom of the bowl & place the ball back inside  |  Cover with a tea towel and place in a warm area for 20-30 mins to rise

Preheat oven to 180c  |  When dough is risen, punch it in the middle, sprinkle some flour onto a bench/large chopping board and knead the dough for 5-10 mins  |  Create 8 pieces from the dough and roll them into balls the same size  |  Oil/butter a cake tin and place the dough in the tin arranged as above (1 in the center, 7 around the outside) cover again with tea towel and place back in the warm spot for another 15-20 mins  |  When risen, place in the oven and cook for approx 30-45 mins until golden and cooked through (keep your eye on them, most oven's are different)

These rolls are delicious fresh from the oven, with home made felafels, hummus and salad.
