Raw Kale Pesto


I was gifted an amazing food processor for my birthday, and to celebrate I made a kale pesto:

  • 6 kale leaves (washed, stripped from the stalks and ripped up)
  • 4 large cloves of garlic (use less if you aren't a garlic head like me)
  • 2 Tbs of nutritional yeast
  • 1/4 cup macadamia oil (you can use olive oil)
  • 1 handful of rocket (mine was homegrown and super peppery)
  • 5 sprigs of parsley
  • 1/2 cup cashews (soaked overnight)
  • 1 tbs sunflower seeds
  • 1/2 cup hot water (or more if needed)
  • pinch of pink Himalayan salt and pepper

1. Blend it all up in a high speed food processor
2. Serve mixed through some Zucchini noodles, or pasta
