Berry burst smoothie & Stephanie Rice feature

Here is the third instalment of Amy's feature on Stephanie Rice's brand new health & wellbeing website.

Amy: "Smoothies are a wonderful way to increase your daily fruit and veg intake, which explains why they are all the rage at the moment. Whilst this one isn’t vegetable based like my morning smoothies, it is still a great recipe to whip up as a mid morning or afternoon snack. It’s filled with antioxidants, which makes it an anti-cancer food, and it’s a wonderfully creamy purple. It is a good idea to drink fruit smoothies on an empty stomach to prevent any unnecessary tummy tantrums."


1/2 cup almond mylk
1/2 cup coconut mylk
2 dates, pitted and soaked
1 cup frozen raspberries
1 cup frozen blueberries
2 ripe bananas
1 tbsp goji berries
1 tsp maca powder


Pitt & soak the dates in warm water for a few minutes, drain and add all ingredients to the blender. Blend on medium/high speed until smooth. Pour into glasses and enjoy in the sunshine with friends.


This smoothie is filled to the brim with antioxidants, which makes it an anti-cancer food!


Believe it or not, It’s best to use bananas when they are covered in brown age spots. The browner the banana, the higher the nutritional content and the easier it will be to digest.

Steph: What lead you to create a Social Media account about food and heath?

Amy: When I first decided to become Vegetarian, I started an Instagram account and a Zine (mini magazine) so that I could share the delicious meals I was enjoying and show my friends and family how simple it is to eat fulfilling, delicious meals as a Vegetarian. As the time went on, I took the next step into Veganism and continued with my social media accounts, only to gain more wonderful followers, and become immersed in the awesome cruelty-free culture that is totally booming right now.

You have a fantastic Instagram account and post some beautiful photos. Do you take the pictures yourself?

Aw, thank you! Yes I take all of the photos myself. When I left school I completed a Bachelor of Arts majoring in Photography & Design, so that has definitely helped me to get to where I am with The Lush Scoop today.

On The Lush Scoop blog I shoot with my outdated Nikon SLR (I’ve used the same one since high school, this is yet to change), which is proof that you can make do with whatever tools you have! Most of the photos on IGare taken with my iPhone unless stated otherwise.

You get some gorgeous comments on your social media, this must make you feel good?

Yes of course! There’s a really beautiful, supportive network happening in the Cruelty-Free world, particularly on Instagram. Without the amazing support from friends and family and the encouraging comments from my followers over the past few years, who knows where I would be today!
